Walnut Lentil Lettuce Wraps

Ingredients:

Walnut 'Meat' Filling
 ½ cup Brown lentils
 2 cups Low-sodium vegetable broth 
 1 tbsp Olive oil
 ½ Large yellow onion, diced  
 3 cloves Garlic, minced  
 ¼ cup Tomato paste  
 1 tsp Smoked paprika  
 1 tsp Ground cumin  
 Kosher salt and black pepper, to taste
 ½ cup California walnuts, chopped   
Dressing
 ¼ cup Tahini  
 2 tbsp Tamari or low-sodium soy sauce  
 2 tbsp Lemon juice  
 2 tbsp Olive oil  
 2 tsp Maple syrup   
 Kosher salt and black pepper, to taste
Lettuce Wraps
 1 Head butter lettuce  
 Shredded carrots  
 Chopped cilantro, for topping  

Preparation:

Combine the lentils and vegetable broth in a medium pot. Bring to a rapid simmer, then reduce to a low simmer and cook for 25-30 min until lentils are tender.

Meanwhile, prepare the dressing. Combine all ingredients into a jar, seal with a lid, and shake well until emulsified. Set aside.

Prep your lettuce, carrots, and cilantro and set aside.

Heat olive oil in a skillet over medium-high heat. Add onion and garlic and sauté for 4-5 minutes until the onions are soft. Stir in tomato paste, spices, salt, and pepper. Cook for 2-3 minutes until the tomato has darkened in color and spices are fragrant.

Once lentils are cooked, add to skillet with aromatics. Add in walnuts. Stir well to combine. Adjust seasoning with more salt and pepper, as desired.

To serve, add a spoonful of lentil walnut mix into a lettuce cup. Top with shredded carrot, drizzle of dressing, and sprinkle of chopped cilantro.
