Chocolate Walnut Date Bars
This is an easy, nutritious take on a layered candy bar made with dark chocolate, dates and California walnuts as the star of the show.

Ingredients:

On a parchment lined sheet pan, roast 1 cup of the walnuts at 300F for 10-12 minutes (reserving ¼ cup) until the walnuts are fragrant and appear oily. Blend in a food processor for about 1 minute until it turns into a chunky walnut butter.
Add dates and vanilla bean paste to the food processor and pulse until well combined. Transfer to a bowl and refrigerate for 10 minutes.
Break up the chocolate bar and melt with the coconut oil over a double boiler or in the microwave in 30 second increments.
To a parchment lined 9x5 loaf pan, press half of the walnut date mixture into a flat surface. Pour half of the chocolate mixture over and spread evenly. Refrigerate until the chocolate sets, about 10 minutes. Repeat with the remaining walnut date mix and chocolate, then sprinkle remaining walnuts over the top along with flaky sea salt to taste. Rest in the fridge for at least 2 hours or until the chocolate has completely set. Remove from the pan and slice when ready to serve.
