Grilled Zucchini Salad with “Pizza Walnuts”

Thin slices of summery zucchini marinate in a tangy dressing to make a simple and delicious salad.

Ingredients:

 2 tbsp Extra virgin olive oil, plus a little extra for the zucchini and the walnuts
 2 tbsp Shallot, finely minced
 ½ tsp Garlic, minced or crushed
 ¼ tsp Salt
 1 tbsp Cider vinegar or red wine vinegar
 Pinch sugar, thyme and oregano
 Black pepper to taste
 1 lb Zucchini (about 5 small ones), halved and thinly sliced
 20 California walnut halves
 1 tbsp Parmesan, finely grated
 8 Red and yellow cherry or grape tomatoes 
 Extra virgin olive oil, high-end, for drizzling on top
 Fresh ricotta, grated Parmesan cheese, goat cheese or crumbled feta
 ½ Fresh corn kernels
 Springs of thyme and oregano, fresh (optional)

Preparation:

Combine olive oil, shallots, vinegar, garlic, salt, sugar, dried herbs and a few shakes of pepper in a large shallow bowl. Whisk to blend, and set aside.

Combine the Parmesan with pinches of dried thyme and oregano in a small bowl. Line a small baking sheet with foil and brush it lightly with olive oil. Place walnut halves on the tray, rounded sides down. Pinch equal amounts of the Parmesan herb mixture on top of each walnut. Place under the broiler and cook briefly until walnuts are golden brown and cheese is melted. (Watch carefully as they can burn easily.) Remove and let cool.

Preheat grill to medium high or set a ridged grill pan over medium-high heat. Brush zucchini lightly with olive oil and cook until nicely grill marked on each side. Transfer directly to the marinade and toss to coat.

Place in the refrigerator and marinate for at least 30 minutes or up to a few hours. Serve with whole or coarsely broken Pizza Walnuts and any desired toppers.
