High Protein Walnut Chicken Salad
A fresh, easy to prep recipe that gets better throughout the week.

Ingredients:
Dressing
½ cup Greek yogurt
1 Tbsp dijon mustard
1 Tbsp honey
½ small lemon
Chicken Salad
1 ½ cups celery, diced
1 ½ cups jicama, diced
½ cup red onion, chopped
cucumber
5 (5oz) chicken, canned
1 cup California walnuts, chopped
parsley to garnish
salt and pepper to taste
Preparation:

Combine all dressing ingredients into a bowl, mix and set to the side.

Prep ingredients by chopping celery, jicama, red onions, and cucumbers.

Toss all chopped ingredients into a bowl and combine with chicken, walnuts, parsley and salt and pepper. Toss ingredients with the dressing.

Refrigerate the salad for 30 minutes and serve.
