Roasted Red Pepper Hummus

Classic hummus gets a flavor updo with the addition of California walnuts and roasted red peppers. Add a drizzle of olive oil and a sprinkle of chopped fresh parsley or paprika to the finished dish for a pretty presentation.

Roasted Red Pepper Hummus

Ingredients:

 2 Cloves garlic
 ½ cup California walnuts
 ½ cup Roasted red peppers
 ¼ cup Tahini
 3 tbsp Lemon juice
 1 tbsp Olive oil
 2 tbsp Water
 1 tsp Paprika
 ¼ tsp Cayenne [up to 1/2 tsp]
 ¼ tsp Salt
 15.50 oz Can garbanzo beans, rinsed and drained
 Cut fresh vegetables, pita bread or chips

Preparation:

Place garlic in the food processor with the motor running to chop.

Add walnuts, red peppers, tahini, lemon juice, oil, water, paprika, cayenne, salt and garbanzo beans and process until very smooth.

Add remaining ingredients and process until very smooth. Season with salt.

Serve with cut vegetables and pita bread or pita chips.

Recipe tip: For a smokey flavor, use smoked paprika.
