Watermelon, Feta, and Walnut Salad
A refreshing summer salad that comes together quickly. Let marinate for up to an hour to get the most out of the flavor.

Ingredients:
6 cups 3/4-inch cubes seedless watermelon
¾ cup California walnuts, coarsely chopped
2 tbsp Olive oil
1 tbsp Lemon juice
1 tbsp Balsamic vinegar
Salt and pepper to taste
⅓ cup Crumbled feta cheese
3 tbsp Snipped fresh basil
Preparation:

Place watermelon and walnuts in a large bowl.

Whisk together oil, lemon juice and vinegar in a small bowl and season with salt and pepper.

Drizzle over watermelon mixture and stir to coat with dressing. Let marinate for up to 1 hour.

Top with feta and basil just before serving.

Recipe tip: Add 1/2 cup small cubes of cucumber to the salad along with the watermelon walnut mixture.
